花胶很多种类,一般情况,花胶泡了一夜然后炖煮后是不会变小的。但是有的品种是会的。大体上花胶有三种情况。有的品种比较耐炖的,肉质比较细腻的,炖了会变大。有的品种炖了之后基本不变。当然也有极少的品种,炖煮之后变小了,比如常见的金龙胶和安南胶。
还有,不建议把花胶泡一夜,这样会让营养流失的,因为泡的水是倒掉的。估计你的是新胶才要这样做,因为新胶的腥味大啦,所以不得不泡。
如果是老胶就不要泡一夜了,老胶一般就是泡1-2小时,看到稍软了能切了就可以。以防营养流失,毕竟不是酒店,不用太在意口感,营养为主。并不是非得吃我们的老胶才这样子说的,而是老胶的功效比新的花胶要好很多。
